				<content:encoded><![CDATA[<p>Max came across a recipe idea that I too have heard of.  Beetroot chocolate cake.  Its interesting as it’s difficult to imagine the earthy, savoury flavour of this root vegetable accompanying a sweet, buttery chocolate cake.  But what is appealing is it makes the cake really moist which enhances the chocolatiness, but the expected earthiness is barely detectable.  I believe Delia Smith has also used this idea using potatoes.</p>
<p>We decided to make the shoot dark and rich to match the flavours of the cake…</p>
<p>Max’s recipe below…</p>

<p>Max erzählte mir letztens von einer Rezeptidee, von der ich auch schon gehört hatte: Rote Beete-Schoko-Kuchen.</p>
<p>Eine interessante und vielleicht etwas verrückte Idee, den erdigen und vollen Geschmack eines Wurzelgemüses mit einem süßen, butterigen Schokokuchen zu kombinieren. Aber das Ergebnis ist toll, der Kuchen ist wunderbar saftig und schokoladig (und bleibt das auch lange) und die eventuell befürchtete Erdigkeit bleibt aus. Ich glaube, dass Delia Smith diese Idee auch schon hatte, allerdings mit Kartoffeln…</p>
<p>Wir entschieden uns zu einem dunklen und „reichen“ shoot, der zum intensiven und tiefen Geschmack des Kuchens passt…</p>

<p><strong>Beetroot Chocolate Cake</strong></p>
<p>Ingredients for a large or two small cakes (gugelhupfs):</p>
<ul>
<li>375 g pre-cooked beetroot (fresh pack)</li>
<li>300 ml sunflower oil</li>
<li>275 g flour (type 405)</li>
<li>3 tsp baking powder</li>
<li>100 g of cocoa powder</li>
<li>100 g milk chocolate</li>
<li>5 eggs (size M)</li>
<li>225 g of sugar</li>
<li>1 packet of vanilla sugar</li>
<li>300 g dark chocolate</li>
<li>20 g butter</li>
<li>Butter and breadcrumbs for the molds</li>
</ul>
<p>Mix the flour, baking powder and cocoa together. Coarsely chop the milk chocolate. Beat the eggs with the sugar and vanilla sugar until foamy, about 5 minutes. In a blender, puree the vegetables with the oil, then add the flour and egg mixtures.  Grease your Cake tin (2.5 liters) with butter and the breadcrumbs.</p>
<p>Pour the mixture into your tin. Bake in a preheated oven (convection 150 ° C / gas mark 2) for approx 45 minutes. Let rest in the form of 10 minutes. Turn out onto a wire rack and let cool.</p>
<p>Place the chopped dark chocolate in glass bowl over hot water and melt with the butter. Cover ring cake with it.</p>
<p>Preparation time about 1 hour</p>

<p><strong>Rote Bete-Schoko-Kuchen</strong></p>
<p>Zutaten für einen großen oder zwei kleine Gugelhupfe:</p>
<ul>
<li>375 g vorgegarte Rote Bete ( Frischepack)</li>
<li>300 ml Sonnenblumenöl</li>
<li>275 g Mehl (Typ 405)</li>
<li>3 TL Backpulver</li>
<li>100 g Kakaopulver</li>
<li>100 g Vollmilchschokolade</li>
<li>5 Eier (Größe M)</li>
<li>225 g Zucker</li>
<li>1 Päckchen Vanille- Zucker</li>
<li>300 g Zartbitterschokolade</li>
<li>20 g Butter</li>
<li>Butter und Paniermehl für die Formen</li>
</ul>
<p>Rote Bete und Öl mit dem Pürierstab fein pürieren. Mehl, Backpulver und Kakao mischen. Vollmilchschokolade grob hacken. Eier mit Zucker und Vanille-Zucker ca. 5 Minuten schaumig rühren. Gemüsepüree und Mehlmischung zugeben und zu einem glatten Teig verarbeiten. Gugelhupfform (2,5 Liter Inhalt) fetten und mit Paniermehl ausstäuben.</p>
<p>Kuchen einfüllen. Im vorgeheizten Backofen (Umluft: 150 °C / Gas Stufe 2) ca. 45 Minuten backen. 10 Minuten in der Form ruhen lassen. Auf ein Kuchengitter stürzen und auskühlen lassen.</p>
<p>Zartbitterschokolade hacken und mit der Butter über einem heißen Wasserbad schmelzen. Gugelhupf damit überziehen.</p>
<p>Zubereitungszeit ca. 1 Stunde</p>

				<content:encoded><![CDATA[<p>This project was inspired by a recent visit back to my parents home in January. Originally I am from South Wales, born in Cardiff and brought up in the Forest of Dean. A last minute whim meant I flew back home to join my parents for a trip to Pembrokeshire, West Wales to stay somewhere we had been visiting ever since I was young. The weather, of course, was cold, howling, sprinkling snow, wet and very very windy. This combined with an open fire, home cooking and walks along the coast and through the woods inspired me to put this piece together to try and recreate the wintry atmosphere of the country I grew up in.</p>
<p>The recipes are all traditional welsh dishes, relatively well known (in Wales) but have never really travelled across any boarders. Welsh rarebit is probably the best known, a cheese sauce grilled on bread including mustard and beer. Cowl, is a Welsh stew, Leeks and Lamb are the primary ingredients, everything else comes according to season. And welsh cakes, simple nutmeg and sultanas spiked dough, flattened into patties and fried in butter. They are all simple, humble and delicious and are best enjoyed inside when the weather outside is cold, wet and windy…the open fires are optional.</p>

<p>Die Inspiration zu diesem Projekt kam auf meiner letzten Reise nach Hause zu meinen Eltern. Ich komme aus dem Süden von Wales, geboren in Cardiff und aufgewachsen bin ich im Wald von Dean. Aus einer spontanen Laune heraus beschloss ich im Januar, zu meinen Eltern zu fliegen und mit ihnen zusammen nach Pembrokeshire, West-Wales, zu reisen, eine Gegend, die ich seit meiner Kindheit nicht mehr gesehen habe. Es war – wie zu erwarten – kalt, stürmisch, nass und schneeschauerig. Dieses Wetter zusammen mit Dingen wie Lagerfeuer, großen Familienessen und Spaziergängen am Meer und durch den Wald haben mir Lust gemacht auf diesen post. Ich wollte die winterliche Athmosphäre des Landes einfangen, in dem ich aufgewachsen bin.</p>
<p>Die Rezepte sind allesamt traditionell walisische Gerichte, wohlbekannt unter Walisern aber außerhalb des Landes kennt sie kaum ein Mensch. Welsh rarebit ist wahrscheinlich eines der noch am bekanntesten Gerichte: ein mit einer Art Käsesoße überbackenes Brot mit Senf und Bier. Cowl ist ein walisischer Eintopf mit Lauch und Lamm als Hauptzutat, dazu eben das Gemüse, das gerade Saison hat. Und welsh cakes, einfache Plätzchen mit Muskat und Sultaninen, die in Butter gebraten werden.</p>
<p>Alles einfache, bescheidene und doch leckere Gerichte, die am besten schmecken, wenn es draußen stürmt und regnet&#8230; ob mit oder ohne Lagerfeuer bleibt ganz Euch überlassen.</p>

<p><strong>Welsh Rarebit</strong></p>

<li>100g mature Chedder cheese, grated</li>
<li>3 tablespoons beer</li>
<li>1 teaspoon mustard</li>
<li>2 tablespoons butter</li>
<li>A pinch of salt and pepper</li>
<li>4 slices of thick dark bread, lightly toasted</li>
<li>Applechutney and Worcestersauce for serving</li>
</ul>
<p>Place cheese and beer in saucepan; stir until the cheese melts.<br />
Add butter, mustard and season with salt and pepper.</p>
<p>Place toast on a baking tray and spoon cheese mixture evenly over each slice. Cook under the grill until golden brown. Serve straight away.</p>

<p><strong>Welsh Rarebit</strong></p>
<ul>
<li>100 g grob geriebener Cheddar von guter Qualität (z.B. Montgomery´s)</li>
<li>3 EL Bier</li>
<li>1-2 TL Senf</li>
<li>2 EL Butter</li>
<li>Salz</li>
<li>Pfeffer</li>
<li>4 Scheiben dunkles Brot</li>
<li>Apfelchutney und Worcestersoße zum Servieren</li>
</ul>
<p>Cheddar, Bier, Senf und Butter verrühren und mit Salz und Pfeffer würzen. Brotscheiben nebeneinander auf ein Backblech geben und mit der Käsemasse bestreichen. Mit dem Backofengrill goldbraun überbacken. Aus dem Ofen holen und mit Apfelchutney und Worcestersoße servieren.</p>

<p><strong>Cawl</strong></p>
<ul>
<li>2lb best end of neck Welsh lamb</li>
<li>1 small swede</li>
<li>1 medium parsnip</li>
<li>4 carrots</li>
<li>1lb potatoes</li>
<li>2 leeks</li>
<li>Small bunch of parsley</li>
<li>1/2 oz flour</li>
<li>salt and pepper</li>
</ul>
<p>Place the meat in a large saucepan and cover with water, add salt and pepper.  Slowly bring to the boil and skim if needed.  Add the chopped carrots, swede, parsnip and whites of leeks and simmer for 2 hours. If in season cabbage and celery etc. can all be used.  Add chopped potatoes and simmer for a further 1/2 hour.</p>
<p>Thicken with flour and water and add the chopped parsley and the remainder of the leeks.  Simmer for a further 15 mins.  Serve hot with wholemeal crusty bread.</p>
<p>Cawl is particularly tasty when left overnight and reheated the next day.</p>

<p><strong>Cawl</strong></p>
<ul>
<li>1 kg Lammkeule</li>
<li>1 kleine Steckrübe</li>
<li>1-2 Pastinaken</li>
<li>4 Möhren</li>
<li>500 g Kartoffeln</li>
<li>2 Stangen Lauch</li>
<li>1 Bund Petersilie</li>
<li>Salz</li>
<li>Pfeffer</li>
<li>1 Prise Zucker</li>
<li>1-2 EL heller Balsamicoessig</li>
</ul>
<p>Fleisch mit kaltem Wasser waschen und in einen großen Topf geben. Mit Wasser knapp bedecken. Salz und Pfeffer zugeben. Bei mittlerer Hitze langsam zum Kochen bringen, sich bildende Trübstoffe vorsichtig abschöpfen. In der Zwischenzeit Gemüse putzen, waschen und in mundgerechte Stücke schneiden. Das Grüne vom Lauch beiseite legen. Gemüse nach ca.1 Stunde Kochzeit zum Fleisch in den Topf geben und bei niedriger Hitze köcheln lassen. Kartoffeln schälen, waschen und in Würfel schneiden, zugeben und ca.20 Minuten köcheln lassen. Petersilie waschen, trocken schütteln und grob hacken. Grünes vom Lauch mit der Hälfte der Petersilie zugeben und mit Salz, Pfeffer, Zucker und Essig abschmecken. Cawl mit der übrigen Petersilie bestreuen und schön heiß servieren.</p>
<p>Tipp: Das Gericht schmeckt nach einem Tag Durchziehen noch besser!</p>

<p><strong>Welsh Cakes</strong></p>
<ul>
<li>300g (10 oz) plain flour</li>
<li>1 1/2 tsp baking powder</li>
<li>120g (4 oz) sugar</li>
<li>1/4 tsp nutmeg (or allspice)</li>
<li>1/8 tsp salt</li>
<li>170g (6 oz) butter</li>
<li>100g sultanas</li>
<li>2 eggs, beaten</li>
<li>50ml milk</li>
</ul>
<p>In a large bowl, sift flour, baking powder, sugar, nutmeg &amp; salt and mix well. Cut in butter &amp; blend into dry ingredients until the mixture appears like coarse breadcrumbs. Add sultanas, beaten eggs &amp; milk and mix into a soft dough.</p>
<p>Turn out onto lightly floured surface, roll out gently (it should be a soft dough) to about 1/2cm thick. Cut out cakes using a 6cm cutter.</p>
<p>Heat a heavy non-stick frying pan to medium heat. Grease with a knob of butter and fry the cakes for about 3 mins eachside or until cooked through. Sprinkle with icing sugar.</p>

<p><strong>Welsh Cakes</strong></p>
<ul>
<li>300 g Mehl (Typ 405)</li>
<li>11/2 TL Backpulver</li>
<li>120 g Zucker</li>
<li>¼ TL geriebener Muskat</li>
<li>1 Prise Salz</li>
<li>170 g Butter</li>
<li>100 g Sultaninen</li>
<li>2 Eier ( Größe M)</li>
<li>50 ml Milch</li>
<li>Mehl zum Ausrollen</li>
<li>Butter zum Braten</li>
<li>Puderzucker zum Bestäuben</li>
</ul>
<p>Mehl, Backpulver, Zucker, Muskat und Salz in eine Schüssel geben und mischen. Butter zugeben und verrühren. Übrige Zutaten zugeben und zu einem weichem Teig verarbeiten. Teig dünn ausrollen und rund ausstechen. Plätzchen mit etwas Butter bei mittlerer Hitze in einer breiten Pfanne nach und nach goldbraun braten. Mit Puderzucker bestäuben und warm genießen.</p>

Max has been busy with a couple of books and I have been away. We suddenly<br />
realised Valentines Day was around the corner and wanted to get something<br />
posted for it. Max said nothing sweet, which for Valentines day, is actually quite<br />
hard.</p>
<p>After going round in circles for about half an hour we settled upon a cocktail<br />
and I found a recipe for a Black Pepper-Grapefruit- martini. Max wanted to<br />
do a canapé, ‘what goes with pepper’ I said (stupid question I know!). Salt!!<br />
Perfect…Salt and Pepper, the perfect pairing for Valentines day. Max ‘invented’<br />
these little Salted crackers….soooo easy to make by buying ready made pastry<br />
from the supermarket. An unexpected and slightly quirky treat to organise for<br />
when you both get back from work on Thursday…Happy Valentines</p>

<p><em>Für eine gefühlte Ewigkeit sind Max und ich nicht mehr dazu gekommen,</em><br />
<em>etwas Neues für unseren Blog zu machen. Max war mit einigen Kochbüchern</em><br />
<em>beschäftigt und ich war auf Reisen. Valentinstag steht vor der Tür und er soll uns</em><br />
<em>Anlass für einen neuen post sein! Max meinte sofort „aber nix Süßes!“, was, wie</em><br />
<em>sich herausstellte, zu einer größeren Herausforderung wurde.</em></p>
<p><em>Nach einer halben Stunde Kopfzerbrechen und im Kreis drehen landeten wir bei</em><br />
<em>Cocktails. Ich fand ein Rezept für einen ‚Schwarzer Pfeffer-Grapefruit-Martini‘.</em><br />
<em>Max wollte einen Cracker dazu, der zu schwarzem Pfeffer passt und sofort</em><br />
<em>meinte ich „Salz!“ (ich weiß, das liegt irgendwie nah…)</em></p>
<p><em>Salz und Pfeffer, die perfekte Paarung für einen Valentinstag! Max dachte</em><br />
<em>sich schnell diese kleinen salzigen Cracker aus, richtig einfach zu machen,</em><br />
<em>der Teig kann fertig im Supermarkt gekauft werden. Perfekt für ein schnelles,</em><br />
<em>überraschendes und irgendwie besonderes Vergnügen nach Feierabend am</em><br />
<em>Donnerstag. Schönen Valentinstag!</em></p>

<p><strong>Black Pepper and Grapefruit Martini</strong></p>
<p>Makes 1 Martini</p>
<ul>
<li>50ml Gin</li>
<li>15ml lemon juice</li>
<li>15ml sugar syrup</li>
<li>30ml grapefruit juice</li>
<li>black pepper</li>
</ul>
<p>Add the gin, lemon juice, sugar syrup and grapefruit juice to a cocktail shaker.  Shake, then double strain into a martini glass. Finish with a grind of black pepper.</p>

<li><em>15 ml Zuckersirup</em></li>
<li><em>30 ml Grapefruitsaft</em></li>

<p><strong>Salted Rosemary Crackers</strong></p>
<ul>
<li>50g Butter</li>
<li>4 Filou Pastry Sheets</li>
<li>2 Sticks Rosemary</li>
<li>Good Course Sea Salt</li>
</ul>
<p>Melt the butter. Take a sheet of the pastry and brush with the melted butter.  Place another sheet of pastry on top, press down lightly and brush with more melted butter.</p>
<p>Wash the rosemary, pull off the needles and chop coarsely.  Sprinkle half the rosemary on the buttered pastry and sprinkle liberally with the salt.  Cut into shapes.  Repeat this process with the other 2 sheets of pastry.  Place Crackers in a preheated oven at 180°C and bake until crisp and golden.</p>
<p>These crackers can also be made with Parmesan, herbs, olives or cured meats.</p>

<p><em><strong>Salzige Rosmarin-Cracker</strong></em></p>
<ul>
<li><em>50g Butter</em></li>
<li><em>4 Filou Teig Blätter</em></li>
<li><em>2 Stiele Rosmarin</em></li>
<li><em>Grobes Meersalz</em></li>
</ul>
<p><em>Butter schmelzen.  Ein Blatt Filouteig ausbreiten und dünn mit Butter bepinseln.  Zweites Filouteig Blatt darüber legen und leicht andrücken.  Oberste Schicht dünn mit Butter bepinseln. Rosmarin waschen, Nadeln abzupfen und grob hacken.  Die Hälfte des Rosmarins auf den Teig streuen.  Mit Salz bestreuen, Herzen ausstechen und auf ein Backblech mit Backpapier legen.  Die 2 weiteren Teigplatten und übrigen Rosmarin und Salz genauso verarbeiten. Cracker im vorgeheizten Backofen bei 180 °C goldbraun backen.</em></p>
<p><em>Die Cracker kann man auch nach Lust und Laune verändern, zum Beispiel mit Parmesan, Kräutern, Oliven oder Schinken&#8230;</em></p>

				<content:encoded><![CDATA[<p>Vor einigen Tagen haben Nicky und ich uns zusammengesetzt und überlegt, was für einen blog post wir noch VOR Weihnachten (die Zeit rennt wie immer!!!) FÜR Weihnachten machen könnten.</p>
<p>Nicky schlug etwas mit Karamell vor. Ich fand die Idee super und wir entschieden uns für eine gesalzene Karamell-Crème als Rezept-Basis. Goldbraunes süßes Gold!</p>
<p>Ich machte mir Gedanken zu passenden Rezepten und das ist das Ergebnis:</p>
<p>Mehrere schöne Rezepte, die man solo oder mit der gesalzenen Karamell-Creme kombinieren kann.  Plätzchen, Muffins, Brittle (ein Klassiker aus England!) und natürlich die gesalzene Karamell-Crème in verschiedenen Varianten !!  Alles schön verpackt auch gut zum Verschenken oder am besten einfach sofort selber aufessen.</p>

<p><em>Salted Caramel</em></p>
<p><em>A few days ago Nicky and I got together and discussed squeezing in one more blog post before Christmas (time is running out as usual!)</em></p>
<p><em>Nicky came up with the idea for salted caramel.  I thought the idea was great and we decided on a salted caramel cream recipe…golden sweet sticky and creamy!</em></p>
<p><em>I thought about suitable recipes to accompany it and this is what I came up with.  Cookies, Muffins, Brittle (an English classic!) and pictures with some ideas for giving as alternative Christmas gifts. All the recipes can be made individually, but you really should do them with the Salted Caramel Cream.</em></p>

<ul>
<li>350 g Zucker</li>
<li>100 ml Wasser</li>
<li>250 g Butter</li>
<li>5-7 g Meersalz</li>
<li>200 ml Schlagsahne (Zimmertemperatur)</li>
</ul>
<p>Zucker und Wasser in einen breiten Topf geben und bei mittlerer Hitze köcheln lassen. Solange, bis ein goldbraunes Karamell entsteht.(Wichtig: zwischendurch nicht rühren!)</p>
<p>In der Zwischenzeit die Butter in Würfel schneiden. Butter und Salz in das Karamell geben, verrühren und solange köcheln lassen bis sich Beides vermengt hat.</p>
<p>Sahne zugeben, schnell einrühren und den Topf vom Herd ziehen.</p>

<p>Karamell-Crème ca.5 Minuten abkühlen lassen und in Schraubgläser füllen. Im Kühlschrank kalt stellen.</p>

<p><em><strong>Salt Caramel Crème</strong></em></p>
<ul>
<li><em>350g of sugar</em></li>
<li><em>100ml of water</em></li>
<li><em>250g butter</em></li>
<li><em>5-7g sea salt</em></li>
<li><em>200ml cream (room temperature)</em></li>
</ul>
<p><em>Heat the sugar and water in a large saucepan and simmer over medium heat until a golden brown caramel is formed. (Important: do not stir in between!)</em></p>
<p><em>In the meantime, cut the butter into cubes. Mix the butter and salt into the caramel, stir and simmer until both have disappeared.</em></p>
<p><em>Pour in the cream, stir quickly and remove the pot from the heat.</em></p>
<p><em>Allow to cool for about 5 minutes and spoon into storage jars, keep in the fridge.</em></p>

<p><strong>Schoko-Muffins</strong></p>
<p>für 12 Stück:</p>
<ul>
<li>200 g Zartbitter-Schokolade</li>
<li>125 g Butter</li>
<li>4 Eier (Größe M)</li>
<li>250 g Zucker</li>
<li>1 Prise Salz</li>
<li>160 g Mehl</li>
<li>1 TL Backpulver</li>
</ul>
<p>Zartbitter-Schokolade grob hacken. 50g beiseite stellen.</p>
<p>Butter und 150g Schokolade in einem Topf bei schwacher Hitze unter Rühren schmelzen, von der Herdplatte nehmen.</p>
<p>Eier, Zucker und Salz in eine Rührschüssel geben und mit den Schneebesen des Handrührgeräts schaumig schlagen.</p>
<p>Mehl und Backpulver gut mischen. Flüssige Schokolade und Mehlmischung zu den Eiern geben und zu einem glatten Teig verrühren.</p>
<p>Teig auf das mit Papierförmchen ausgelegte Muffinblech verteilen. Übrige Schokolade darüberstreuen und im vorgeheizten Backofen (E-Herd: 175 °C/ Umluft: 150 °C/ Gas: Stufe 2) ca. 20 Minuten backen. Muffins aus dem Ofen nehmen und auf einem Kuchengitter auskühlen lassen.</p>

<p><em><strong>Chocolate Muffins</strong></em></p>
<p><em>Makes 12</em></p>
<ul>
<li><em>200g of dark chocolate</em></li>
<li><em>125g butter</em></li>
<li><em>4 eggs (size M)</em></li>
<li><em>250g of sugar</em></li>
<li><em>1 pinch of salt</em></li>
<li><em>160g flour</em></li>
<li><em>1 tsp baking powder</em></li>
</ul>
<p><em>Coursely chop 50 g of the chocolate and set aside.</em></p>
<p><em>Place  butter and 150g chocolate in a saucepan over a low heat, stirring until it melts, remove from the heat.</em></p>
<p><em>Put the eggs, sugar and salt in a mixing bowl and whisk with a hand whisk until frothy.</em></p>
<p><em>In a bowl, add the baking powder to the flour and mix well. Add the liquid chocolate and flour mixture to the eggs and mix until smooth.</em></p>
<p><em>In a muffin tin, place paper muffin cups and spoon the mixture into them. Sprinkle with the rest of the chocolate and bake in preheated oven (electric oven: 175 ° C / fan 150 ° C / gas mark 2) for about 20 minutes. After baking, allow to cool on a wire rack.</em></p>

<p><strong>Karamell-Kekse</strong></p>
<ul>
<li>250 g Mehl (Typ 405)</li>
<li>½ TL Backpulver</li>
<li>125 g Butter</li>
<li>1 Ei (Größe M)</li>
<li>60 g Zucker</li>
<li>1 Prise Zimt</li>
</ul>
<p>Abrieb von einer ½ unbehandelten Zitrone und Orange.</p>
<p>Karamell-Salz-Crème zum Füllen.</p>
<p>Mehl und Backpulver mischen. Butter in Stückchen schneiden und zusammen mit Ei, Zucker, Zimt und Abrieb hinzufügen, mit den Händen zu einem glatten Teig verkneten. In Frischhaltefolie wickeln und ca. 30 Minuten kalt stellen.</p>
<p>Teig auf bemehlter Arbeitsfläche dünn ausrollen. Runde oder andere Formen aus dem Teig ausstechen, dabei Teigreste wieder verkneten und neu ausrollen und ausstechen.</p>
<p>Kekse auf 2 mit Backpapier ausgelegte Backbleche verteilen und nacheinander im vorgeheizten Backofen (E-Herd: 200 °C/ Umluft: 175 °C/ Gas: Stufe 3) ca. 8 Minuten backen. Herausnehmen und auf einem Kuchengitter auskühlen lassen.</p>
<p>Auf die Hälfte der Kekse je 1 TL Karamell-Salz-Crème geben, einen 2. Keks daraufsetzen und etwas zusammendrücken.</p>

<p><em><strong>Caramel Biscuits</strong></em></p>
<ul>
<li><em>250g flour (type 405)</em></li>
<li><em>½ tsp baking powder</em></li>
<li><em>125g butter</em></li>
<li><em>1 egg (size M)</em></li>
<li><em>60g sugar</em></li>
<li><em>1 pinch of cinnamon</em></li>
<li><em>Lemon zest from half an orange and lemon</em></li>
<li><em>Salted caramel cream for filling</em></li>
</ul>
<p><em>Combine the flour and baking powder.  Cut the butter into small pieces and combine with egg, sugar, cinnamon and orange and lemon zest, knead with your hands until smooth. Wrap in cingfilm and put in the fridge for about 30 minutes.</em></p>
<p><em>Roll out the dough thinly on a floured work surface. Cut out your biscuits using cookie cutters and reroll out any left over dough so there is no wastage.</em></p>
<p><em>Spread the cookies out on a baking tray lined with 2 sheets of baking paper, and place in a preheated oven (electric oven: 200 ° C / fan 175 ° C / gas mark 3) for about 8 minutes.</em></p>
<p><em>Remove and cool on a wire rack.</em></p>
<p><em>Spread a teaspoon of the salted caramel dip on one biscuit and sandwich with a second.</em></p>

<p><strong>Erdnuss-Brittle</strong></p>
<ul>
<li>125 ml Ahornsirup</li>
<li>175 g Zucker</li>
<li>2 EL Wasser</li>
<li>2 Prisen Salz</li>
<li>200 g ungesalzene Erdnüsse</li>
<li>1 EL Butter</li>
<li>½ TL Natron</li>
</ul>
<p>Ahornsirup, Zucker  und Wasser bei mittlerer Hitze aufkochen, leicht karamellisieren lassen.</p>
<p>Salz und Erdnüsse zugeben und ca.5 Minuten unter Rühren köcheln lassen.</p>
<p>Vom Herd nehmen, Butter und Natron gut unterrühren und in eine mit Backpapier ausgelegte Form geben. Glatt streichen und erkalten lassen.</p>
<p>Herausnehmen, in Stücke brechen und genießen.</p>

<p><em><strong>Peanut Brittle</strong></em></p>
<ul>
<li><em>125ml maple syrup</em></li>
<li><em>175g sugar</em></li>
<li><em>2 tablespoons water</em></li>
<li><em>2 pinches of salt</em></li>
<li><em>200g unsalted peanuts</em></li>
<li><em>1 tablespoon butter</em></li>
<li><em>½ tsp bicarbonate of soda</em></li>
</ul>
<p><em>Bring the maple syrup, sugar and water to the boil over a medium heat and caramelize slightly.</em></p>
<p><em>Add the peanuts and salt and simmer for about 5 minutes stirring occasionally.</em></p>
<p><em>Remove from the heat, stir in the butter and baking soda and pour into a tin lined with baking paper. Smooth and allow to cool.</em></p>
<p><em>Removing from tin, break into pieces and enjoy.</em></p>

				<content:encoded><![CDATA[<p>This is one of the first projects me and Max made together a few months before we started the blog.  We were saving it in the hope that we could get it published somewhere, we had no idea where.  We showed it to a few magazines but the industry, unfortunately doesn’t work like that.  So it is consigned to our portfolios and of course, Nicky&amp;Max.</p>
<p>I want to start including more artistic shots in my work, combining food pictures with landscapes, people, places and cooking shots.  I love the extra sensory dimesions this adds to the food, they make it more interesting and build stories around it.  The landscape work was taken in Templehof park, not far from where we live.  I was reading a lot about foraging at the time and it put me in the mood for stark, moody places and coincided nicely with the Pfefferling season, where you can buy big baskets of these mushrooms in supermarkets for a few weeks.  Otherwise known as Chanterelles to any non Germans.</p>
<p>This isn’t so much a foodie post, more an artistic indulgence on our part.  I hope you enjoy it.</p>

<h3><span style="text-decoration:underline;">Pilze</span></h3>
<p>Diese Bilder zählen zu unseren Ersten. Sie entstanden einige Monate, bevor wir unseren Blog ins Leben riefen. Wir haben sie immer aufgehoben, in der der Hoffnung, sie irgendwann irgendwo veröffentlichen zu können. Wir schlugen sie einigen Magazinen vor aber erhielten kein verbindliches Feedback und so landeten sie erst einmal in unseren Portfolios. Und heute erwachen sie zu neuem Leben!</p>
<p>Nickys Wunsch ist es, mehr und mehr künstlerische Aspekte in unsere Arbeit miteinzubringen und Foodbilder zu kombinieren mit Landschaften, Menschen, Orten… Die Bilder gewinnen eine zusätzliche sinnliche Dimension, sie werden interessanter und es werden Geschichten um das Essen herum gebaut. Die Landschaftsbilder dieser Strecke sind auf dem Tempelhofer Feld entstanden, nicht weit von Nickys Wohnung. Die Inspiration für die Bilder entstand aus einer intensiven Beschäftigung mit dem Thema Natur und sie war auf der Suche nach Orten, die stimmungsvoll und irgendwie starr und öde waren und damit perfekt zu Pfifferlingen passten, die zu dieser Zeit Saison hatten und in allen Supermärkten in großen Körben angeboten wurden.</p>
<p>Also dieses Mal kein wirklicher ‚foodie post‘, mehr ein Ergebnis von Nickys künstlerischer Ader. Wir hoffen, es gefällt euch!</p>

				<content:encoded><![CDATA[<p>This project was made almost a year ago on the run up to Christmas.  Me and Max had just started working together and I was in the local supermarket when I came across what was, to me, the strangest looking display I had ever seen.  In such a mundane environment, in the middle of the fruit and veg, on a display table with knobbly, misshapen, grotesque and fascinating Pumpkins on.</p>
<p>We don’t really have them in the UK.  I don’t know why!  But for me I had had no idea of the variety and strangeness of this vegetable.  I could probably have got one very classic style pumpkin from my local UK supermarket, but Butternut Squash is what is readily available (and smaller and easier to work with).  Maybe a few slightly more unusual varieties at some specialist in a food market.  But this selection was alien to me, I was staring at it for ages.</p>
<p>&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;&#8212;</p>
<p>Diese Bilder sind vor fast einem Jahr entstanden in der Vorweihnachtszeit. Max und ich hatten gerade angefangen, zusammen zu arbeiten und ich machte im Supermarkt um die Ecke eine erstaunliche Entdeckung. Inmitten von hübsch drapierten Früchten und verschiedenem Gemüse lagen da huckelige, scheinbar verunglückte, grotesk anmutende Dinger: Kürbisse!</p>
<p>Kürbisse gibt es nicht so häufig in England. Ich verstehe gar nicht warum! Ich hatte ja keine Ahnung, wie viele verschiedene Arten und manchmal komische Formen es von diesem Gemüse gibt. Mit etwas Glück findet man vielleicht einen dieser typischen Halloween-Kürbisse im englischen Supermarkt, oder eventuell noch Butternuss-Kürbis, denn der ist etwas handlicher zum Verarbeiten. Für alle anderen Sorten müsste man in England bestimmt schon einen Spezial- Supermarkt aufsuchen. Die Auswahl, vor der ich im berliner Supermarkt stand, war für mich alien-mäßig, ich habe stundenlang davor gestanden.</p>

<p>Sofort habe ich Max angerufen…. „Lass uns was mit Kürbis machen!“</p>

<p>I had been immersed in lots of renaissance still life painting and wanted to take the ugliness of these vegetables and celebrate it in a sort of “warts and all” way.</p>
<p>The outcome is one of my favourites and we have decided to include the recipe for the Pumpkin Bread and Rosemary butter.  Max made his own butter which was incredibly easy and the Pumpkin bread was like no bread I have ever tasted.  If you bake one thing this Autumn, make it this.  The salted rosemary butter was the perfect compliment and every scrap was finished off within hours.</p>
<p>The perfect chilly Autumn Sunday baking project…great with a warming wintry soup perhaps.</p>

<p>Zur Vorbereitung auf das Shooting habe ich mir viele Stillleben aus der Renaissance angeschaut und meine Überlegung war, die Seltsamkeit des Kürbis zu feiern und bewusst zu zeigen.</p>
<p>Die Bilder, die entstanden, gehören heute zu meinen Lieblingsbildern und wir haben uns entschlossen, ein Rezept für Kürbisbrot und Rosmarinbutter hinzuzufügen. Max hat die Rosmarinbutter frisch gemacht und das Brot ist eines der leckersten, die ich je gegessen habe. Wenn Ihr diesen Herbst auch nur ein einziges Brot backt: entscheidet Euch für dieses hier! Die leicht gesalzene Rosmarinbutter ist der perfekte Begleiter und alles, was nach dem Shooting übrig blieb, war ratzfatz aufgegessen.</p>
<p>Die perfekte Backidee für kühle Herbstsonntage…. Vielleicht in Kombination mit einer wärmenden winterlichen Suppe…</p>

<p>P<strong>umpkin Walnut Bread</strong></p>
<ul>
<li>500g pumpkin (eg Muskat or Hokkaido Squash)</li>
<li>500g wholemeal wheat flour</li>
<li>1 cube (42 g) yeast</li>
<li>1 pinch of sugar</li>
<li>350 ml lukewarm buttermilk</li>
<li>100g butter or margarine</li>
<li>2 tsp salt</li>
<li>100 g walnuts</li>
<li>Butter for greasing</li>
</ul>
<p>Wash and peel the pumpkin and remove the seeds. Dice the pumpkin flesh and boil in salted water for about 8 minutes or until al dente and then remove from the water. Take half the pumpkin and puree in a blender. Take the other half and dice, and allow to cool.</p>
<p>Melt the butter. Place flour in a bowl and make a well. Add the yeast, a pinch of sugar and the warm buttermilk. Combine the mixture until it makes a dough. Cover and leave in a warm place for about 15 minutes.</p>
<p>Combine the melted butter with the salt, pumpkin and 70 g of walnuts. Add to the dough mixture and knead into a smooth dough (the dough hook with a blender is good). Grease a large loaf tin, add the dough, cover and leave for another 20 mins. Scatter with the remaining Walnuts and bake in a preheated oven at 160 ° C for about 50 minutes.</p>
<p>Remove the bread from the oven and allow to cool. This is excellent with the homemade rosemary butter.</p>

<p><strong>Kürbis-Walnuss-Brot</strong></p>
<ul>
<li>500 g Kürbis (zB Muskat oder Hokkaido-Kürbis)</li>
<li>500 g Weizen-Vollkornmehl</li>
<li>1 Würfel (42 g) Hefe</li>
<li>1 Prise Zucker</li>
<li>350 ml lauwarme Buttermilch</li>
<li>100 g Butter oder Margarine</li>
<li>2 TL Salz</li>
<li>100 g Walnusskerne</li>
<li>Butter für die Form</li>
</ul>
<p>Kürbis waschen und Schale und Kerne entfernen. Kürbisfleisch würfeln und in Salzwasser ca. 8 min. leicht bissfest kochen. Wasser abgießen und die Hälfte des Kürbis pürieren. Würfel und Püree etwas abkühlen lassen.<br />
Butter schmelzen. Mehl in eine Schüssel geben und in die Mitte eine Vertiefung drücken. Hefe hineinbröseln und mit einer Prise Zucker, der lauwarmen Buttermilch und Mehl zu einem Vorteig verrühren. Zugedeckt an einem warmen Ort ca. 15 Minuten gehen lassen.<br />
Butter zusammen mit dem Salz, Kürbis und 70 g Walnüsse zum Vorteig geben. Alles mit den Knethaken des Handrührgerätes zu einem geschmeidigen Hefeteig kneten. Teig in eine gefettete große Kastenform geben, glatt streichen und weitere 20 Minuten zugedeckt gehen lassen. Mit übrigen Walnüssen bestreuen und im vorgeheizten Backofen bei 160°C ca. 50 Minuten backen.<br />
Brot aus dem Backofen holen und abkühlen lassen. Dazu passt gut die selbstgemachte Rosmarin-Butter.</p>

<p><strong>Homemade Rosemary Butter</strong></p>
<ul>
<li>200 ml cream</li>
<li>4 stalks of rosemary</li>
<li>1 teaspoon pink pepper</li>
<li>coarse sea salt</li>
</ul>
<p>Pour the cream into a clean glass jar and close the lid tightly. Shake vigorously for 3-5 minutes. This separates the fat from the water, creating a creamy whipped cream. Continue shaking the cream for another 7 minutes, it then starts to become a lump of butter. Put the butter in a colander to drain, what drains away is buttermilk (maybe keep this fort he bread!). In the colander you should be left with small chunks of butter. Rinse them with cold water. This is your butter! Wash the rosemary, shake dry and chop coarsely. Mix the rosemary and pink pepper in the butter and season with salt.</p>

<p><strong>Selbstgemachte Rosmarin-Butter</strong></p>
<ul>
<li>200 ml Sahne</li>
<li>4 Stiele Rosmarin</li>
<li>1 TL Rosa Beeren</li>
<li>grobes Meersalz</li>
</ul>
<p>Sahne in ein sauberes Schraubglas geben. Das Glas gut verschließen und 3-5 Minuten kräftig schütteln. Durch das Schütteln trennt sich das Fett vom Wasser und es entsteht eine cremige Schlagsahne. Sahne ca. weitere 7 Minuten schütteln, dabei sammelt sich dann das Fett zu einem Butterklumpen. Butterklumpen in ein Sieb geben, damit die entstandene Buttermilch abfließen kann. Den Butterklumpen mit kaltem Wasser abspülen. Fertig ist die Butter! Rosmarin waschen, trocken schütteln und grob hacken. Rosmarin und Rosa Beeren unter die Butter heben und mit Salz abschmecken.<br />

<p>The final days of summer have arrived and I am waking up everyday not knowing what to expect from the changeable Berlin climate.  Anything from 16 degrees with rain to 25 degrees with sunshine.  I am still hoping for a repeat of last year and a freak 30 degree sunny weekend in October that might, in some way compensate for this years rubbish summer.</p>
<p class="MsoNormal">
<p>The food I am drawn too is also changing, cross season…not too heavy, not too light.  Posing new challenges in balancing what we are eating with the season.   And figs have arrived, I just walked past them in my local corner supermarket.  For a Brit, figs are super sophisticated, not soooo available (you won’t find them in smaller UK supermarkets) and not that cheap either, so they have a kind of elitism.</p>

<p>Feigen</p>
<p>Die letzten Sommertage sind angebrochen und jeden Morgen frage ich mich, was wohl das wechselhafte Berliner Wetter heute bringen mag. Von regnerischen 16 Grad bis hin zu sonnigen 25, zur Zeit hält es ja so ziemlich alles bereit. Immer noch hoffe ich auf verrückte 30 Grad im Oktober, so wie letztes Jahr, das wäre doch eine gerechte Entschädigung für den nicht wirklich stattgefundenen Sommer dieses Jahr.</p>
<p>Auch auf die Wahl meines Essens wirkt sich der Jahreszeitenwechsel aus. Momentan ist mir nach „etwas dazwischen“, nicht zu schwer, nicht zu leicht… Die Herausforderung, da bei etwas zu bleiben, was gerade Saison hat, ist groß. Aber: Gerade bin ich im Supermarkt um die Ecke an ihnen vorbei gelaufen: Feigen! Für uns Briten sind Feigen sehr speziell, fast mondän, nicht so oft zu bekommen (zumindest in kleineren Supermärkten) und vor allem nicht günstig – eine elitäre Frucht sozusagen.</p>

<p>I saw this recipe ages ago, I think in an old Donna Hay recipe book I gave my Mum.  I loved how she had taken something that is quite posh (Donna Hay, not my Mum) and made it into something snacky.  I apologise now as I write this that I have just realised my last post is also ‘on toast’, if it makes it better, both set of pictures were shot almost a year apart.  But I am attempting to be seasonal and give you a recipe for something that will only be available for the next month.</p>
<p>Again very simple, not too many ingredients, that’s <em>ricotta cheese</em> for anyone who is not sure, I suspect cream cheese is also good.  Max toasted up the bread and rubbed it with garlic, the figs are fried off in <em>butter/olive oil, honey and seasoning.  Max said you can also toast the ricotta cheese on the toast before serving up with the figs and rocket</em>….perhaps more suitable at the end of the fig season when it’s a little colder.  Don’t forget the rosemary, it helps the dish sit perfectly between sweet and savoury.</p>
<p>A spontaneous and easy thing to do with freshly bought figs.</p>

<p>Dieses Rezept habe ich vor einigen Jahren gesehen, ich glaube, in einem alten Donna Hay Buch, was ich meiner Mutter gegeben habe. Ich fand die Idee von ihr (also von Donna Hay, nicht von meiner Mum) toll, etwas eigentlich Schickes zu etwas „Snackigem“ zu machen. Während ich das hier schreibe, fällt mir auf, dass unser letzter post auch „auf Toast“ war, ich entschuldige mich dafür und schwöre, dass beide Bilder fast ein Jahr auseinander liegen. Mir ist es aber wichtig, mit der Saison zu gehen und Euch etwas anzubieten, was in den kommenden Monaten überall zu finden ist.</p>
<p>Wieder ein echt einfaches Rezept mit wenig Zutaten. Für alle, die sich nicht sicher sind: es ist Ricotta, ich denke, jeder andere Frischkäse ist auch okay. Max hat das Brot getoastet und mit Knoblauch abgerieben. Die Feigen werden in Butter oder Olivenöl etwas angebraten und mit Honig und Salz/Pfeffer gewürzt. Max sagt, man kann den Ricotta auch überbacken und dann mit den Feigen und Rucola zusammen servieren, vielleicht eher was für kühlere Tage. Vergesst nicht den Rosmarin (am besten mit in die Pfanne), das sorgt für ein tolles Aroma.</p>

				<content:encoded><![CDATA[<p>I am always looking for ridiculously simple recipes.  This one was inspired by a recipe I found in one of my favourite books, ‘Great British Food’ from Canteen.  The recipe was roasted tomatoes on toast, Max adapted it to something you would make on the hob rather than in an oven.  It speeds up the cooking time and makes it more suitable for a lunch or snack.  It’s a great thing to make when you can get your hands on special tomatoes that would be wasted on a sauce or boring salad. No recipe for this, we photographed all the ingredients we used so anyone can work the rest of this out.  Just throw in some good Olive Oil and seasoning.</p>

<p><em>Tomaten auf Toast</em></p>
<p><em>Ich bin ständig auf der Suche nach wirklich simplen Rezepten. Dieses hier ist inspiriert von einem meiner Lieblingsbücher &#8216;Great British Food&#8217; von Canteen. Das ursprüngliche Rezept war für Ofen-Tomaten auf Toast. Max hat es verändert und zu einem Pfannengericht gemacht, was die Kochzeit um einiges kürzer macht und es zu einem idealen kleinen Mittagssnack werden lässt! Ein wunderbares Rezept für besondere Tomaten, solche, die fast zu schade sind für eine Soße oder einen schnöden Salat.</em></p>
<p><em>Es gibt hier kein Rezept, alle Zutaten sind auf den Bildern zu sehen. So kann jeder sein eigenes Gericht kreieren, wichtig ist nur richtig gutes Olivenöl und kräftiges Würzen.</em></p>

<p>I love crisps, and back in the UK, we have a whole load of different kinds of vegetable crisps…parsnip, sweet potato, turnip etc etc.   Enough to convince you that they might even be healthy (but they aren’t).</p>
<p>So as a nod to all of you who have shown an interest in vegetable crisps in all of their varieties, we have done another set.  This time….celery crisps.  And to accompany the idea of turning vegetables into glorious junk food, we have also come up with a batter recipe.  Take your vegetables….. broccoli, asparagus, green beans….batter them, fry them and turn them into something tasty and snacky…</p>
<p>Just add a dip.</p>

<p><em>Ich bin überrascht&#8230; der beliebteste post diesen Monat ist der über Rote-Beete-Chips. </em></p>
<p><em>Ich liebe Chips und zu Hause in England haben wir tausende verschiedener Sorten, darunter auch viele Gemüse-Chips. Pastinaken, Süßkartoffeln, Rübchen und und und&#8230; So viele Sorten, dass man denken könnte, es handelte sich um eine gesunde Art zu snacken. (ist aber Quatsch!)</em></p>
<p><em>Für Euch alle, die Ihr Euch so sehr für Gemüse-Chips in allen Variationen interessiert: Unser neues Set: Sellerie-Chips! Und eine weitere Idee, um Gemüse zu großartigem junk food zu machen – ein Teigrezept. Einfach irgendein Gemüse nehmen, wie Brokkoli, Spargel oder grüne Bohnen und in den Teig tunken. Dann frittieren und fertig ist ein weiterer leckerer Gemüse-Snack!</em></p>

<p><strong>Batter recipe:</strong></p>
<p>Ingredients:</p>
<ul>
<li>100 ml of cold water</li>
<li>½ -1 teaspoon salt</li>
<li>50 g flour</li>
<li>50g cornflour</li>
<li>1 egg yolk (size M)</li>
</ul>
<p>Whisk together 100 ml of cold water, salt, flour and starch.  Stir in egg yolks, and allow to rest in the fridge for 30 mins.</p>
<p>To pimp up your batter, you can add sesame seeds, nuts, herbs, lemon zest &#8230;&#8230;</p>

<p><em><strong>Tempura/ Ausbackteig:</strong></em></p>
<p><em>Zutaten:</em></p>
<ul>
<li><em>100 ml kaltes Wasser</em></li>
<li><em>½ -1 TL Salz</em></li>
<li><em>50 g Mehl</em></li>
<li><em>50 g Speisestärke</em></li>
<li><em>1 Eigelb (Größe M)</em></li>
</ul>
<p><em>100 ml kaltes Wasser, Salz, Mehl und Stärke mit einem Schneebesen verrühren. Eigelb unterrühren, kalt stellen und ca. 30 Minuten ruhen lassen.</em></p>
<p><em>Unter den Teig können verschiedene Zutaten gegeben werden wie zB.  Sesam, verschiedene Nüsse, Kräuter, Zitronenschale&#8230;&#8230;</em></p>
